Let's talk about food.

Since we've been building this house, food has been an issue. It's hard to fix dinner because I'm either out at the other house, with no way to fix dinner, or my Shug doesn't come home until 8:00 or 9:00 pm, and he just grabs something out when he gets off of work. Last week I made a simple tuna salad.
Tuna
Celery
Pasta
Mayo
Mix it all together and chill.
That's it.

Put some panera bread and dipping oil and a glass of wine and you have a quick meal.


When we were on our way home from Kentucky, we saw this tomato stand.


BLT's. A quick meal!

Don't even try to eat this sandwich on your own. It's big bread.


This morning I used the same loaf of bread and made my Shug and I some toast. I got up for a minute and my toast disappeared.


GUILTY .....but cute.


So anyway, do you have any other ideas for quick, transportable meals?

Critera:

Can eat meal on paper plates.

Does not have to be kept hot.

and as I said....quick.

  3. Your puppy looks so cute . . . and well, puppies just have to be puppies, LOL.
    On days when you know that you'll be home to make a meal, do a roast beef, ham or chicken. If you make extra, then you'll have some great cold meat to chop and make sandwiches. We love those made with pickle, chopped celery and mayo. Just nice to have on hand for the quick eat and go days.

    Your ripple afghan is looking very pretty. When do you find the time to work on it? You seem like such a busy gal. Have a great day, Connie :)

  5. I'm not going to be much help - I'd survive on salads (rice, pasta, couscous, quinoa) and sandwiches and maybe get one of those small disposable BBQs if I fancied having some grilled meat for dinner.

  6. I was going to suggest quinoa salads just as Fiona did above. I made one last weekend, really good. I took it to work 3 days, just put it in a little insulated lunch bag, kept well. We put peas in our tuna/pasta salad. I like to get them fresh out of the garden but did not have any this year so I would use frozen. Just put in colander and drain your pasta over them and throw it all together! I have my daughter and four grandsons here this week, that is why I have not been posting. Just sit down to catch up with everyone when I can. Not sure what it going to happen with them. Not sure if I am up to another whole family living with us or not.

  10. Cooking a whole chicken or buying a broasted/roasted one leaves you so many options. Eat off it once. Then you can pull the meat off and make chicken salad. Boil the carcass and save the broth to boil pasta. Add mixed veggies. You wont miss the meat with all that rich broth. A simple salad is sliced/seeded cuc, cubed moz cheese and cherry tomatoes in ranch dressing.

  11. we, big family with 3 hungry teenagers, like wraps...lebanese bread (fresh, fresh herbs or any greens, sauce - our fave is sweet chilli and sour cream at the mo - and a protein: chicken, tuna, beans or last resort cheese.Everyone makes their own.

  12. I use leftovers alot with tortilla shells -- and make a wrap. Microwave all the way! :)
