Apple Pie Recipe

Rumor is....this has been the best apple growing year ever.
 I believe it. (and I thought I was the only one with a surplus because of my bees)
  I can't stand to see them go to waste, so I picked and picked and picked.  And canned.  And made applesauce.  And pie. 
 I've told some people I was going to start cooking with honey this year.  So I thought I'd share a recipe with you using honey.  I don't know if you ever do this, but I will make something and throw this and that in, and then not remember how I made it or what exactly I did, and my Shug will want it again.  So this time, I wrote it down as I went...
  Now..here's the thing.  I just peeled as many apples as I thought I needed.  And I had a couple of pears in the fridge that needed used.  And I had blueberries left over from blueberry pancakes the Sunday before.  So on those amounts you just wing it.
Then I added the rest of the stuff, put it in a bowl and let it sit while I made the dough.
 I might have added about three tablespoons of flour to the mix, because the original recipe calls for it. 
 The original recipe calls for sugar, but I used honey instead.  (I had three people contact me yesterday for honey.  I am completely out.)
 I always use Martha Stewart's recipe for pate' brisee' for my pie crust.  It's in her pies and tarts book.  Probably on her web too.  It has never failed me.  Evah!
 I folded the dough over so I could get two pies out of one crust, one for my Shug, one for my Dad.  And this way all the goopy, blobby juice that makes the oven smoke and turn black and chunky stays in the pie pan. 


 See the juice - in the pan.  Told ya. After the last pie spillage, then the muffin spillage, I'm not taking anymore chances with this NON-self cleaning oven.   Anyway, yummy pie.

 Get one of these apple picker thingys and
and attach it to a paint pole that extends and keep those feet planted on the ground!  First bears, and now this!

    1. Hi Susie,
      I love seeing the canned apples too. I have a lot to eat before I open the cans. Since we don't have the upstairs of the house finished yet, no insulation, the downstairs (except for where we are living) is chilly...just like a fridge. So I keep the ones I picked in the chilly rooms. I'm hoping they last awhile because I haven't had time to can them. I've been eating an apple a day!

    1. I would not have been save if you would have taken a light headed spell. Just sayin' kid. It happens to me with my feet planted on the ground! I'm just out of honey to sell...not for myself. I don't think I've ever sold completely out before.

  3. Hi Cindy Bee, gosh you made me want to stick the kettle on and wait for a piece of that pie! Every year the birds eat my apples cos I never get around to netting them. Maybe this year....

      That sounds like a good idea, only that pie is gone! I've never had birds eat my apples before. I have deer, yellow jackets, ladybugs....and worms (ewwww) eat them though.
